Christmas Cake
Ingredients:
- 30 grams Ground almonds (could also be substituted with chopped cashew
nuts)
- 250 grams flour (maida)
- 250 grams butter
- 250 grams dark sugar
- 250 grams currents
- 125 grams glazed cherries
- 250 grams mixed peel
- 50 grams ginger preserve (optional)
- ½ tablespoon cinnamon (powdered)
- ¼ tablespoon mixed ground spices (cloves, cardamom, cinnamon and
nutmeg)
- 5 eggs
- ½ bottle rum
Preparation:
- Chop the fruits and soak them in rum, pouring the rum gradually every
alternative day.
- Soak for about a month and stir every morning (always keep the vessel
covered).
- Beat the egg whites well, then gradually add the egg yolks.
- Beat the butter and gradually add the dark sugar and beat till it
becomes light and creamy.
- Before starting the beating, sieve the flour, baking powder and
ground spices and mix them to the soaked fruits with the flour and keep for
about 40 minutes to 1 hour.
- To the creamy butter mixture, add the beaten eggs, mix in the flour
and the fruits and mix well with a wooden spoon.
- Bake in a pre-heated oven for about 1 hour or more till it is well
baked.
